"Soak up those last rays of late summer before autumn kicks in! This dish is like a mini-vacation—one bite and you’ll feel like you’re back on a balmy evening in Greece. The star of the show? That perfectly charred, zaatar-honey glazed halloumi. We treat it just like a steak: pan-seared and finished in the oven for a rich, flavorful crust that hides a creamy, dreamy center. It pairs so beautifully with the fresh side salad. Speaking of, that salad loves a good, mellow onion. If yours is a bit sharp, just soak the slices in the dressing for a few minutes to take the edge off. Have extra zaatar? Mix it with a little oil, slather it on some pita, and bake it for the perfect side bread!"
