Greek-style pita sandwiches

Step 1/3
- 200 g oyster mushrooms
 - 2 tbsp olive oil
 - 1 tbsp lemon juice
 - ¼ tsp dried oregano
 - ¼ tsp onion powder
 - ¼ tsp garlic powder
 - ¼ tsp pepper
 - 1 pinch ground cinnamon
 - 1 pinch ground nutmeg
 - 1 tsp starch
 - 1 tsp soy sauce

Cut the oyster mushrooms into strips. Place the strips into a large tupperware container and add all the ingredients for the marinade. Stir well. Seal the container and let the mushrooms marinate in the fridge for at least 1 hr. Do not let them marinate for more than 24 hrs., though!

Heat a grill pan on high, or a skillet on medium-high. Once hot, add the marinated mushrooms. Fry the mushrooms for 5 – 7 min., or until golden brown and slightly crispy along the edges. Once they’re done, add a generous pinch of salt to them and stir well.
Step 3/3
- 1 red onion
 - 2 pita breads
 - 4 tbsp hummus
 - 1 tomato
 - ¼ cucumber
 - 15 g parsley
 
- bowl (small)
 - toaster
 
Meanwhile, soak the red onions in a small bowl of hot water for a few minutes to allow the flavor to mellow a bit. Toast your pita bread and spread with a layer of tzatziki. Next, add the tomato, onion, cucumber, parsley, mushrooms, and additional tzatziki. Enjoy!
