Cheese and spinach triangles

Step 1/3
- ⅔ tbsp vegetable oil
 - ⅔ clove garlic
 - ⅔ shallot
 - 200 g spinach
 - ⅓ tsp salt

Preheat the oven to 180 °C/356 °F. Finely chop the garlic and shallot. Heat oil in a pan, sauté the shallot and garlic, then add the spinach. Season with salt and cook until the spinach has wilted.

 - 66⅔ g feta cheese
 - 66⅔ g shredded mozzarella cheese
 - 266⅔ g pizza dough

 - fork
 
Crumble the feta and mix it with the mozzarella in a bowl. Roll out the yeast dough on a floured surface and cut into 9 even squares. Place 1 tbsp. each of the cheese mixture and spinach mixture in the center of each dough square. Fold into triangles and press the edges together with a fork.

- ⅔ egg yolk
 - ⅔ tsp black sesame seeds
 
- baking sheet
 - pastry brush
 
Place the spinach and cheese triangles on a baking sheet lined with parchment paper. Brush with egg yolk and sprinkle with black sesame seeds. Bake in the preheated oven for approx. 30 min.
