The perfect steak

- 2 cloves garlic

For the steak, preheat the oven to 90°C/194°F. Carefully squash the garlic cloves with a knife and peel.

- 400 g beef tenderloin
 - 2 sprigs rosemary
 - 4 sprigs thyme
 - olive oil (for coating)
 - salt
 - pepper

 - food thermometer (optional)
 
Brush the steaks with a little oil, season with salt and pepper and place in a baking dish with the herbs and peeled garlic cloves. Cook the steaks in the oven for approx. 50–60 min. or until the core temperature reaches the desired doneness (approx. 54–55°C/129–131°F for medium).

Heat a steel or cast-iron pan over high heat (we do not recommend using a non-stick or Teflon pan). Place the steaks, herbs, and garlic in the pan straight from the oven. Sear for approx. 2 min. on each side, remove and leave to rest for 10–15 min. Enjoy!

How long should I cook a steak?
Depending on your desired doneness, you should cook a 4–5 cm thick steak for the following times for optimum results:
– Rare: approx. 2 min. per side
– Medium rare: approx. 3 mins. per side. 
– Medium: approx. 4–5 min. per side
– Well done: approx. 5–8 min. per side
