Mango chia pudding

- 2 vanilla bean
 - 300 ml coconut drink
 - 100 ml almond drink
 - 2 tbsp honey

Split and scrape vanilla bean. Add to jar along with coconut drink, almond drink, and honey. Stir to combine.

- 6 tbsp chia seeds
 
- refrigerator
 
Add chia seeds and mix until combined. Cover and refrigerate overnight.

Before serving, peel and cube the mango. Purée in a blender until smooth. Top chia pudding with mango purée and enjoy!
