Step 1/4
- 2 eggplants
 
Slice eggplants in halve, add olive oil and place in the oven for 40 minutes
Step 2/4
- ⅔ onion
 - ⅔ leek
 - ⅔ tomato purée (passata)
 - 6⅔ button mushrooms
 - Meat Alternative (optional)
 
Cut all vegetables and stir fry with tomato purée and meat alternative
Step 3/4
After 40 min, hollow out aubergines and stir into the rest of the vegetables for 5 minutes
Step 4/4
Stuff eggplants and serve!
