Mediterranean alphabet soup

- 2 cloves garlic
 - 1 onion
 - 2 stalks celery
 - 1 carrot
 - rosemary (for serving)
 - thyme (for serving)
 - 400 g canned whole peeled tomatoes
 
- knife
 - cutting board
 - sieve
 - bowl
 
Finely chop the garlic and onions. Cut the celery and carrots into cubes. Finely chop the rosemary and thyme. Drain the canned tomatoes in a sieve, reserving the liquid. Then crush the tomatoes with your fingers.

- olive oil (for frying)
 - 1 l vegetable broth
 - 1 tbsp tomato paste
 - salt
 - pepper
 
- pot (large)
 - cooking spoon
 
In a large pot over medium heat, sauté tomato pieces in olive oil for approx. 5 minutes. Then sauté the carrots, celery, onions and garlic for approx. 3-4 minutes. Add broth, tomato juice, tomato paste. Then season to taste with salt and pepper. Bring the soup to a boil and simmer for approx. 10 minutes.

- 200 g alphabet pasta
 - 100 g Parmesan cheese (for serving)
 
- grater
 
Next, add the alphabet noodles and cook for approx. 7-8 min. or until cooked "al dente". Lastly, stir the herbs into the soup. Serve the soup with shaved parmesan cheese. Enjoy your meal!
