Kerala chicken chukka

- 2 chicken thighs
 
Skin the chicken and cut to pieces.

- 2½ onion (medium)
 - 4 cloves garlic
 - 1 tbsp ginger
 
- mortar and pestle
 - frying pan
 - slotted spoon
 
Slice onions and fry in coconut oil until golden brown. Remove from oil with a slotted spoon and place the fried onion on top of the chicken. Peel and mash ginger and garlic with a pestle. Place on top of chicken.

- ½ tomato
 - 1 tsp cayenne pepper
 - ½ tbsp coriander seeds (ground)
 - ½ tsp black peppercorn (ground)
 - ½ tbsp garam masala
 - ½ tbsp curry powder
 - ½ tsp salt
 - ½ sprig curry leaf
 
Dice tomato and add to chicken. Add all spices: cayenne pepper, coriander powder, black pepper, garam masala, curry powder, salt and curry leaves. Mix all ingredients with the chicken and set aside.

- 2 tbsp coconut oil
 
Heat up oil in the pan and add chicken to fry. Fry for 20-25min on medium heat until chicken is done.
