Cauliflower Fajitas

Step 1/7

 - sauté pan
 
Bring a large pot of water to a boil. Preheat your over to around 200 C / 400 F.
Step 2/7
- ½ cauliflower
 - ½ red bell pepper
 - ½ green bell pepper
 - ½ yellow bell pepper
 - ½ onion
 
Cut the cauliflower into bite-sized florets. Slice the peppers into strips and the onion into slices.
Step 3/7
Once the water has boiled, add the cauliflower and boil for 5 mins then drain.
Step 4/7
- ½ tbsp chili powder
 - 1 tsp smoked paprika powder
 - ½ tsp onion powder
 - ½ tsp ground cumin
 - ¼ tsp garlic powder
 - ½ tsp salt
 - ⅛ tsp pepper
 - ¼ tsp chili flakes
 
Mix all the spices together in a bowl.
Step 5/7
- 1½ tbsp olive oil
 
Place the drained cauliflower, sliced peppers and onions into a baking tray. Drizzle with the olive oil and toss to combine. Sprinkle the spice mixture over all the ingredients, tossing regularly so they are all coated evenly.
Step 6/7
Bake for 20 minutes or until the reached your desired texture. Nice if there is a little charring.
Step 7/7
- cilantro (for garnish)
 - lime juice (for garnish)
 
Once cooked, serve with some tortillas and / or rice. Add some coriander / cilantro and lime juice to taste.
